Tiramisu recipe, an Italian dessert with a long history

Tiramisu is, without no doubt, the quintessential Italian dessert, whose flavor does not understand borders, even reaching the space of the hand of the Italian astronaut Luca Parmitano, who in 2013 ate a dehydrated tiramisu during his stay in orbit.

Of course, its flavor is from another planet, but we are lucky to have it close and to enjoy the delicious combination of mascarpone, eggs, biscuits, coffee and cocoa on any occasion.

How to make a perfect tiramisu

There are multiple tiramisu recipes, but at GIOELIA Cremeria we like to follow traditional techniques and flavors. In this case, we are going to show you an easy tiramisu recipe, which can be prepared quietly at home, with the whole family, since young and old can participate in its preparation and all have a fun time together.

Ingredients:

  • 500 gr of mascarpone
  • 6 egg yolks
  • 250 gr of fresh cream
  • 6 tablespoons of icing sugar (120 gr)
  • 400 gr of long espresso coffee
  • 60 gr of sugar for coffee
  • 250 gr of biscuits of soletilla (savoiardi)

Preparation:

  1. Beat the egg yolks with sugar with an electric rod until obtaining a clear foam.
  2. Next, add the mascarpone and continue beating until you get a compact cream.
  3. Separately, in a very cold container, beat the cream until obtaining a smooth and firm consistency.
  4. Mix everything gently until you get a smooth and homogeneous cream.
  5. Fill your pan inserting layers of mascarpone with the coffee dipped biscuits.
  6. If you want, as a decoration you can finish the last layer with small drops of cream using a pastry bag.
  7. Let it cool in the fridge for 2 hours and sprinkle with cocoa just before serving.

The history of tiramisu: origin and legends

The birth of tiramisu takes us back to the 17th century when it was first prepared in honor of the Duke of Tuscany, Cosimo III de Medici. Reportedly, it became the courtesan’s favorite dessert for the extra dose of energy it provided.

Another popular tiramisu legend is set in the middle of the 19th century and its creation is attributed to a pastry shop in the city of Turin. It was initially prepared to entertain a nobleman, Camillo Benso, count of Cavour.

He was responsible for achieving the unification of the various states in the Italic peninsula and to help him in the great undertaking that had been entrusted to him, he was delighted with the creation of this rich dessert.

Most recent origin of tiramisu

Continuing with the review of the tiramisu history, we find a third version that establishes its starting point in the brothels of northern Italy. It was presented to customers as an aphrodisiac dessert with restorative effects, becoming a business.

Back then, tiramisu was made only with eggs and sugar. As we know it today, it would be the result of adaptations made by the restaurants in the area that were refining the recipe until achieving the current result.

Several pastry chefs claim their authorship. Some point to the pastry chef Roberto Linguanotto of the Alle Beccherie restaurant in Treviso; others mention Carminantonio Iannaccone who would create it to wink at the everyday flavors of the Treviso region.

The truth is that today we cannot know for sure what the true origin of tiramisu is, but historians point out that we must frame the making of the first tiramisu in the second half of the 20th century in the Veneto region.
